ABSTRACT Ten samples of laban zeer were collected from different locations of Minia province, and analyzed for chemical composition, minerals and amino acids content. Results indicated that the average gross composition of Laban Zeer was: 25.98%, total solid, 4.30% fat, 12.81% total protein, 4.25%ash and 4.58% salt.
